I made some pretty awesome radish kimchi and tofu crumble for dinner tonight.

Radish Salad Kimchi:
1 large radish - julienne
2 tablespoons salt to dehydrate the radish (Toss with the radish and pour out the salty radish water)
5 cloves garlic (Or you can add more to taste)
1.5 tablespoons sugar
2 tablespoons red pepper flakes (I recommend the Assi vegan pepper flakes)
1.5 tablespoons apple cider vinegar
1 tablespoon sesame oil
Optional: 1 stalk of green onion

Chill in fridge.
Sprinkle with sesame seeds when ready to serve.
