This Fulton River District establishment follows a popular culinary trend – molecular gastronomy. Diners are told to “expect the unexpected” here as they are served a multi-course menu featuring very small bites, playful edible presentations, and an almost childlike experimentation with flavors. Their prix fixe menu features innovative nibbles like Corn Suspension, which is bites of quail suspended over corn chowder; and Tree Trunk, rich maple syrup poured over sweetbreads, pancakes, bacon and egg yolks.
Da Kas – Amsterdam, The Netherlands
Calling green thumbs: you can actually have a delectable 5-star meal inside a greenhouse! Located in Amsterdam, Da Kas grows their own veggies in the glass-walled structure where diners enjoy an earthy haute cuisine. Their menu is inspired by rural Mediterranean cuisines, and the freshest vegetables play a role in their oft-changing menu.
Ithaa Undersea Restaurant – The Maldives
Anyone can enjoy a romantic dinner under the stars. But what about a dinner under the sea? Ithaa Undersea Restaurant provides a 270-degree panoramic view of gorgeous blue waters and marine life, all 16 feet below sea level. While the ambience is the selling point, the cuisine is delicious as well. For lunch, try the seared milk-fed veal tenderloin with aubergine caviar and lime with caramel jus. For dinner, order the raw yellowfin tuna cubes with lime & sesame oil, served with crispy wontons.
State Bird Provisions – San Francisco, CA, USA
What started out as two chefs creating their own recipe for the California state bird – quail – ended up as one of the hottest restaurants in Northern California. Reservations are hard to come by, and for good reason – chef-owners Stuart Brioza and Nicole Krasinski have created their own style of California cuisine that can appeal to anyone. Their namesake fried state bird is their signature dish, but also worth trying is the duck liver mousse with almond biscuits, or the pancake with smoked black cod.
Pubbelly – Miami, FL, USA
Located on the west end of Miami Beach, this spot blends together two very appealing cuisines: gastropub fare and Asian street food. The result is phenomenal. Pates, pork & duck rillettes, terrines, sausages and pickles are all made in-house, and their menu changes every day. Ramen and udon noodles are frequently featured with a carbonara flair, and traditional favorites like fried chicken and short ribs are served with pan-Asian flavors.
